Scrapple ?
Looks like hog head cheese.
Scrapple is what I know it as. Exactly what it sounds like, all the scrap look up the ingredients. It sounds gross but it taste like a fried hotdog
Down south this is called souse and it does have chunks of scrap pork meat like feet with seasoning and spices I cling vinegar. Yuck!
