The way I make mine is I do everything the same way most except for I grill my meat and then I put it in a casserole dish with the onions and bell pepper and a few choice seasonings, and my secret sauce. But it looks good the way you make it also

You can make a sauce with drippings left after onions and meat are removed from frying pan. You can make a sauce with none of that and add it in. Google some recipes for sauces for cooking meat and try a few. Play with what you learn and have fun with sauces. James Beard has a very big book out that is nothing but sauces. Maybe 200 pages. Probably included a kitchen sink somewhere. Don't be afraid to try things.
