if you keep it in the fridge itll take months to grow mold. we used to get fresh bread baked daily at this deli i worked at in college, as employees wed get to take it home after its "2 day" shelf life...I'd put it in the fridge and it would be good for the semester, if I left one out it would mold in 3 days. temperature control keeps the mold from growing.

I’ve noticed this with bread lately too. And hot dogs don’t cook the same anymore. I remember if you microwaved a hot dog for too long it would split open but now they just get what looks like sun burn blisters.. we’re being poisoned!

My husband bought a loaf of bread in April and it has been opened once and still sitting on top of the refrigerator no mildew/mold. No one will eat it.
