some years ago, when I was working in a restaurant, one of the prep guys was bragging about his knife skills and was showing off that exact thing. He lost concentration for a moment, and a chunk of his knuckles ended up on the tray he was using. The manager drove him to the ER because he used to drive ambulance as an EMT, and said they knew him at the ER and they'd get him seen quicker.
