first, probably a duck. this technique is called "En Vessie" and is a classic French technique. if I remember correctly, its also the predecessor and reson from the development of sous vide cooking. it looks bland but the products is usually either marinated or brined before being wrapped in the pigs bladder. the "bubble" in then placed in liquid that is kept at a constant temperature. insuring the meat is cooked to an exact temperature and retaining most of the moisture.
