That meat is tough, because when you have to be sawing the meat to cut it, nah, smoked ribs will fall off the bones if you know what you’re doing, whoever this is they put the meat side by side and squeezed it down with a knife and it was so tough he had to press down hard. I like my meat cooked tender and falling off the bone! If you you wear dentures or you don’t have good teeth, chewing that tough ass meat will mess your mouth up!!

I believe that is a beef prime rib, cooked with a bar-b-que technique. But I think it should have had a lower temp, and a much longer cook time to get the "tendernism" as another commenter termed it.
