He's a line cook. He cooks lines.
It might be kadayif noodles (also known as kataifi or kunafa dough). You need to create a thin, pourable batter from flour, cornstarch, water, and oil, which is then piped onto a hot, non-stick pan to cook briefly into fine, delicate strands. These Phyllo Dough noodles are the crispy bits in Dubai Chocolate. I could very well be wrong 🤔 but this is what it appears to be as a possibility. 👍
according to Google's AI it's the following: The man in the image is making Künefe hasırı (also known as Kadayıf), which are the thin, shredded wheat-like strands used to make the popular Middle Eastern dessert Künefe. The process shown involves: Technique: A liquid batter made of flour and water is poured through a specialized multi-holed dispenser onto a large, rotating heated metal plate. Formation: As the plate spins, the thin streams of batter cook almost instantly into delicate, circular threads. Usage: Once these strands are collected, they are layered with unsalted cheese, baked until crispy, and soaked in sweet syrup to create the final Künefe dessert. This traditional method is widely practiced in Turkey, particularly in regions like Hatay, which is famous for its ancient Künefe-making traditions.

kataifi
This is how my great uncle Bubonju and great aunt Monianetta used to make noodles. z they used the same device to make the pasta for the best ravioli you'd ever want to eat!! LORD, they were amazing in the kitchen, especially when they worked as a team!! I miss them so very much and wish I could have convinced them to write down their recipes. They always said they couldn't because they never measured anything and they truly didn't, I have cooked this way all my life due to their influence. of my kids want to learn how to make the food I cook, they need to cook with me to learn. I measure nothing unless I'm baking or making kaluah, so nothing is written down except those recipes. Thanks for sharing, this brought back wonderful memories!!
VERY NICE!!!!

What is that tho? Doesn’t look like food? I wouldn’t want to eat it. No gloves. Don’t know if the surface is sanitized. But I do think that’s a great set of tools for art!

Don't need gloves if you wash your hands. Besides, your immune system will die if you don't make it work regularly. Oversanitation is worse than a few germs left behind!!
