It might be kadayif noodles (also known as kataifi or kunafa dough). You need to  create a thin, pourable batter from flour, cornstarch, water, and oil, which is then piped onto a hot, non-stick pan to cook briefly into fine, delicate strands.  These Phyllo Dough noodles are the crispy bits in Dubai Chocolate. I could very well be wrong 🤔 but this is what it appears to be as a possibility. 👍

This is how my great uncle Bubonju and great aunt Monianetta used to make noodles. z they used the same device to make the pasta for the best ravioli you'd ever want to eat!! LORD, they were amazing in the kitchen, especially when they worked as a team!! I miss them so very much and wish I could have convinced them to write down their recipes. They always said they couldn't because they never measured anything and they truly didn't, I have cooked this way all my life due to their influence. of my kids want to learn how to make the food I cook, they need to cook with me to learn. I measure nothing unless I'm baking or making kaluah, so nothing is written down except those recipes. Thanks for sharing, this brought back wonderful memories!!
