No restaurant can function without a dishwasher. A good dishwasher is a beautiful thing. I always fed my dishwasher whatever they wanted, except seafood off the sautee line or signature steak. They got breaks if I had to put on an apron and do it myself. They knew they were appreciated, and on a busy night they'd leave with 100 in cash from shared tips.
