why don't they just complain to the cook instead of taking it out on the dishes? ...

This is tradition in a Greek wedding. The plates are not China, but more of a ceramic and not glazed Greek traditions are very interesting to watch and learn.

in Jewish weddings after the vows and blessings happen the couple have sips of wine from a small wine glass. it is wrapped in a fabric napkin, and the groom stomps on it. It symbolizes the ending of being single and alone to being together, creating their own world. kinda the same.

If that would be me after the wedding, they would be taking me to the emergency room for all the cuts on my hands

If I was an evil spirit, I'd turn tail because two people broke a stack of plates in my spiritual presence. Yep, I'm scared.

Just because something is traditionally done does not make it a good thing. Plenty of wasteful things are ended for more productive new traditions.
