This process is also known as brumation, which is a state of dormancy that reptiles enter in response to colder temperatures and shorter daylight hours. During brumation, a turtle's metabolism and heart rate slow down significantly. Turtles still require oxygen during this time, which they can get through a process called pharyngeal breathing.
during WW2 the ships went Galapagos Islands, hijacked a gang of sea turtles, repeatedly, a bunch of times and stacked them 12 high in the bottom of the ships because they can go one year without food or water (at least the sea tortoise can) so they always had fresh meat because refrigeration, freezers or freeze dried food wasn't a common thing yet.
