You seem well prepared except for a bucket to catch residual water from the PEX to that you're about to cut. If the ceiling paint is flat (no gloss) in the room below it will leave a nasty brown watermark, don't panic. a 50/50 solution of bleach and water will remove even the toughest stain in about 15 minutes.
