Resonable force on someone passively resisting is simple come along holds, pressure points and calling local authorities unless the individual is impeding traffic, interrupting normal business or otherwise causing a public safety situation. When the security started throwing punches from the start they initiated a public fight and can be arrested in most states. Unless you have a special designation IE: Security at the state department, a federally insured bank, hospital, or VIP protection to name a few you are just a mall cop observe and report but take no action unless you are protecting yourself or someone else.
