Hood exhaust filters that go above the grill, it's nasty NOT to clean them.
ive gone to that stand many of times not true they keep that cart clean

lmao bro those trays have nothing to do with cooking your food. those are the smoke traps above the griddle so smoke doesn't fill the cooking area. the smoke carries grease and they need to be cleaned... in other words these are vents. smfh
