Cooking them with fire is traditional and expensive but result the best tequila brands like Los Abuelos which is named Fortaleza in USA.Very expensive but the cheaper brands like Jose Curvo are cooked in autoclaves or solvent extraction.
I can never figure out why does it brown and then later it’s white through the steam process in a liquor gets steamed out and then it gets cool really quick through the steam process
