They do make FDA approved edible plastic wrap now. It's actually made from milk by-products and some are made from gelatin. Completely edible. But honestly he probably just skipped the part where he wraps it molds it removes it from the wrap and then inserts it back into the rack before slicing the chops. But yes I would eat this in a second! Center cut pork chops with prosciutto and cheese and greens! yummy!
