What I like to do is add just a little salt pepper and garlic to both sides throw it in the pan and drop a little olive oil on there now it helps to sear in the juices and even if you make the steak well done it's still amazingly Juicy and Delicious but I prefer it medium rare personally

That was normal butter, not clarified. You can see the milk fat. At that heat it seems like it would burn.
