As, a mom, a grandma and great grandma who loves to cook., I won't gate keep. That is not plastic under the foil. It is a parchment baking bag. I have been using these forever. for everything from turkeys, roasts, anything that you want to be especially tender. And it's amazing for ribs. you can suck them right off the bones. but if you are in a smoking competition this technique would not be allowed as it definitely would be cheating.P.S. keep this trick to yourselves. Don't tell everyone grandma's old tricks of the trade!!! Lol. it'll be our little secret!!! Lol
