Its no different than picking them by hand. Its a sweet potato farm, and this is a method of popping them off the root.
That shape is more like a carrot than a potato and they don't appear to be connected to vines or roots. They are all scooting down slowly toward the ones that appear cleaner and there's another crew ahead of them.
