My Grandma had a smoke house. She'd put newspaper down on a work table, all seasonings lots of salt, pepper, sugar, etc.. Shed do that I can't remember how long then when it was time to hang & smoke she put cheese clothe around it and never took it off until ready to use it. She'd hang the beacon & hams up and that was it other than the smoking time..

For those that said they would pass, I have a little bit of information you might not be happy about. If you ever go to a really expensive 5 🌟 steak house you will be eating dry aged beef. It hangs in a cooler set to the perfect temperature until purchased. What you see on the outside is removed before cooking. That is one reason you'll never eat a steak or prime rib that tastes better. You'll never cook a steak or purchase a steak from the grocery store that will live up to that 5 🌟 experience.
Yes, my husband said when they were young, they would harvest a hog and then wrap the hams and let them hang in the barn to age. They also did the same thing to make cottage cheese. They would put the milk in a bag and hang it outside to age and my husband told me there would be flies all over the bag, but no one seemed to be concerned. Things were a lot different than.
I would trusted aged meat over store bought meat. I remember seeing smokehouse in one of my neighbors backyard. When they slaughter animals they shared with other families. We don't get good smoked meat anymore. You have to remember they didn't have refrigerator.
