This reminds me of recipe I'd seen years ago using cauliflower to replace pizza dough to make it diabetic friendly. In this case broccoli is used to replace lagania.

They can leave out the carrots unless carrots lose that sweet taste when cooked like that. Sweet taste of carrots in a stew is what I dislike about stew. Ick. Of course spiced carrots with butter, brown sugar and cinnamon is wonderful, if not mixed with other veggies. Ick!
