I always put the full sheet on the bottom and then I could set the cut piece on top. It's a lot easier.
Every Drywaller does that. I did it in the 80's. Every guy on the project was doing it.

no I wouldn't, I've seen to many work so fast that they miss the studs, use either to many or not enough screws, drive them to deep etc and don't care. I've seen the same from some roofers, we had to pay someone to stand next to the guys to make sure they did the job right and to code, didn't take long and they were fired
