I’m a posolé connoisseur or at least my kids, friends and sister say so. I use the biggest can of hominy Walmart sells. It evens out the meat to hominy ratio. Plus, I use real red chile, (I’m from New Mexico) and for seasoning I use garlic salt, cumin and regular salt all to taste. Then I chop up onion and limes for garnish. I rarely use cabbage but it’s pretty much whatever you like to add to it 😉 Also, if you want to use chicken, it’s a popular option here in NM to make green chile chicken posolé. A tasty dish for sure. Garnish with the onions and lime as well🍋‍🟩
