I did this 20 years ago working in fast food. Ice and a grill brick. It's not new or futuristic. Some managers are just cheap and tell you to use water and a rag to save a few bucks.

This has been used for a very long time. It does come with risk. Temperature shock can cause warping or cracking. We mic a little water, oil and vinegar on heavy duty flat tops. Then we scrub.
In the US we don’t waste this much time and we don’t need to cool down our flat til to clean it. We clean it while it’s hot

We did this at Hardee’s way back in the 80s in the 70s I see it gone at sambos
that's a good way to crack to your flat top when rapidly cooling it down.

This is nothing new to people who have been doing it forever. You can use ice for more than just a flat top, if your coffee pot burns swirl a couple of ice cubes in it then wash, it will be like brand new.
