The problem with frying chicken in butter is the butter tends to burn long before the chicken is done in the center. That's especially true when the chicken is rolled in flour.

I learned years ago, some vegetable oil (any kind really) flour chicken, salt, pepper, n a stick of butter on top of the chicken. Top with a lid n cook slowly. Chicken comes out very tasty. Speaking of the oil, I have used vegetable oil, canola oil, olive out, n coconut oil (you cannot taste the coconut oil on chicken. I’ve been looking for sunflower oil. Haven’t found it in the stores yet. But ChicFilA uses sunflower oil. Most fast food places uses too much vegetable oils n it will turn my stomach. What’s weird is I use vegetable oil at home it does not bother my tummy at all. Only if I eat too much. Lol! That along with canola, olive n coconut oils do not bother my stomach as much.
