I saw a video like this a few months ago and I started doing this and it's perfect results. you add the water after the eggs are at least halfway cooked and it only takes like 30 seconds after the water is added and you get perfect over easy and don't have to flip them and worry about breaking the yolks

these kind of eggs are called basted adding a little water and putting a lid what kind of like make a film over the top and yes if you throw bacon grease in there and splatter all of the place
