Why is everyone talking about cleaning the chicken? It's not necessary to wash chicken (or any meat/poultry) before cooking it. All you do is risk spreading contaminants around your kitchen. As long as you cook the chicken to the correct internal temperature, any pathogens that are present will be destroyed.

So many negative and obnoxious comments here! There's absolutely no reason to waste film watching someone rinse/"wash" chicken. They don't even show that on the Food Network shows. Frankly, I think that it's a brilliant concept, and as a professional cook, myself, I can attest that her ratios, temperature, and explanation of how long to cover the bunt pan were perfect! Kudos to her for being so creative, practical and smart! PS: Adding more chicken would crowd the vessel, and the chicken would be undercooked!

I would of removed the skin off the big part of the leg. it won't get crispy and most wouldn't eat the skin. But i leave some skin on the part that sticks up to hold the leg when eating it with your fingers or you can remove all skin. otherwise this is a good recipe. You can also use breasts or thighs if so desired
