You can remove things from a pan too quickly, it's not coming out without messing up...and, you can leave it in too long...it's not coming out very nicely...kitchen is science, chemist, timing, technique, and skill...used to be generation worked the kitchen magic, and taught the next generation, and the next, no cookbooks, no internet, maybe a few soiled pages and index cards for ingredients notations...
