Instructions: 1. Preheat the oven to 180C and line a baking tray with parchment paper 2. In a bowl whisk together the flour, salt, baking powder, baking soda and espresso powder (set aside). 3. In a different bowl whisk together the melted butter and both sugars. 4. Whisk in the egg and vanilla extract until combined. 5. Now whisk in the dry ingredients mixture from earlier. 6. Scoop out balls from approx 65g of dough and place them on your baking tray leaving enough space. 7. Bake for 10-12 minutes (you might have to bake in 2 parts). 8. Let the cookies cool down completely before decorating. For the mascarpone: 1. mix together all the ingredients with an electric mixer until itβs thick. 2. Transfer to a piping bag, pipe a swirl on each cookie. 3. Dust/sift the unsweetened cocoa powder on top of every cookie.
Ingredients cookies: - 110g unsalted butter, melted - 225g all purpose flour - 105g dark brown sugar - 95g caster sugar - 1 egg - 1 tbsp instant espresso powder - 1 tsp vanilla extract - 1/2 tsp baking soda - 1/2 tsp baking powder - 1/2 tsp salt Ingredients Mascarpone mixture: - 180g mascarpone - 115g heavy cream - 90g icing sugar - 1 tsp vanilla extract Decorating: 1 tbsp cocoa powder
