we grew up calling them potato cakes; using left over potatoes (hillbillies throw nothing away!!!). they go fantastic with a plate of soup beans (pintos for th "city slickers!) & neck bones or hammocks! oh, & don't forget your masterpiece.... a big pone of cornbread and either sliced red tomatoes order err... some fried green tomatoes.
I take cooked seasoned ground meat. Put mashed potatoes w added flour and butter. Mix well. Place a tablespoon full of potatoes on palm of hand. ADD 2 teaspoon of meat in center. Roll up and fry the potatoe balls till cooked golden. Eat after cooled down.

I ❤️ this idea but I would definitely have to add some more seasonings like salt, pepper, garlic powder and a little onion powder, paprika and some slices of ham & slice cheese then fold it up then fry it up for a few minutes on each side 😋!!

I would substitute butter with olive oil, the wheat flour with coconut flour and instead of deep frying ‘em in oil, I’d simply lightly brush each side of the potatoe pancakes with olive oil, and then bake them in the air fryer—much healthier…✌️♥️
