That comes from trying to create a 2 dimensional image from a globe on an unbroken square sheet. The more accurate maps are the ones with the cutouts on top and bottom. And also the only reason that the United States is at the top of the map and not Australia is because the earliest map makers were from the northern hemisphere and put themselves on top. There’s no reason north has to be up, that’s relative to the perspective of the viewer.

because the earth is a spherical 3D object, and maps are a 2D representation, lat/long navigation maps have to distort the top and bottom of the map larger, and the middle smaller in order for it to function for navigation.

Iceland looks so big on a map because of the Mercator projection, which distorts the relative size of landmasses the farther they are from the equator. It's not a conspiracy.
